Healthy chocolate cookies… as easy as ABC!
150 g wholegrain rolled oats
35 g raw cocoa powder
2 spoonfuls of date syrup (bought or homemade)
250 g egg whites
70 g chopped nuts
One tablespoon of Extra Light olive oil Borges
Step by Step
Mix the rolled oats, egg whites, walnuts and cocoa powder in a bowl. The amount of cocoa powder you use will depend on how bitter you want the cookies to be (if you find raw cocoa powder too bitter, you can always use drinking chocolate instead, which contains added sugar).
Add the tablespoon of Extra Light olive oil Borges and the date syrup, which is very easy to make yourself at home: simply soak the dates for half an hour and then beat them together with water and a few drops of lemon juice until you get the desired texture.
When you’ve got a moist cake mix, spread it out onto an oven tray in small portions (25 to 30 g). Bake at 180 ºC for 8 to 10 minutes.
