To take advantage of dry meat, marinate it!

If you find meat dries out or goes hard when grilled, try marinating it for a few hours beforehand. Put the meat in a dish, season with salt and pepper, sprinkle some aromatic herbs on top (thyme, oregano, bay leaf), add a glass of apple vinegar, a glass of olive oil, a glass of white wine, a diced onion and some roughly chopped cloves of garlic. Cover overnight. The next day, take it out of the marinade and grill.
